For the first venture out to a tailgate for the Indianapolis Colts I of course had to make a cocktail for the event. Since it is still hot, a crisp pineapple Moscow Mule sounded perfect for the tailgate.
While the copper mugs make the Moscow Mules fun to drink, they aren't required. But I did love drinking out of a mug at the tailgate.
Now, I was able to make about 8 pineapple Moscow Mules from the four pack of ginger beer I bought. Make sure you have the alcoholic version of the beer. I guess the non-alcoholic version of ginger beer is popular too.
Pineapple Moscow Mule
Now the drink itself is super easy to make. It isn't a two ingredient drink, but you should have no problem finding the key ingredients.
Ginger Beer
Pineapple Vodka
Pineapple Juice
Lime Juice
Mint leaves
Stir to combine and enjoy. Even some of the tailgaters who aren't huge beer drinkers loved the Pineapple Moscow Mule. Naturally, once I created this one, I was instantly thinking of what other flavors I could combine to make my next Moscow Mule.

Pineapple Moscow Mule
Ingredients
- 1 bottle of Ginger Beer
- 4 ounces of pineapple vodka
- 4 ounces of pineapple juice
- 2 limes
- Fresh pineapple chunks
- Mint leaves
Instructions
- Fill two copper mugs with ice.
- Pour two ounces of vodka and two ounces of pineapple juice into each mug.
- Cut one lime in half and juice one half into each mug.
- Fill each mug with one bottle of ginger beer.
- Add mint leaves to each mug.
- Stir gently to combine.
- Garnish with lime slices and pineapple chunks.
